I swear, a good plate makes all the difference in the world.I have recently become obsessed with collecting mismatching cups and plates with patterns and paint, in all sizes and shapes.
But the pancakes I am about to share with you, would taste good even if they were served on a oily, wrinkled paper bag, from last nights 3am burrito run.
I can’t recall where I first had cornmeal pancakes, but they were delicious. And they serve as a great alternative to using traditional flour, which often results in a heavy, doughy, sitting in your tummy for the rest of Sunday, kind of feeling.
I love corn.Corn chips (Have’a Chips are my fav), Polenta, Corn Tortillas, etc…. Corn is a wheat intolerant’sbest friend. That as well as Quinoa and Brown Rice. Personally I feel a lot better when I don’t eat a lot of wheat. Also, I have never liked eggs, even when I was a kid. And, I prefer my cows in the field, not on my plate or in my morning latte.
So when I came across this yummy buttermilk cornmeal pancake recipe, I decided to do a little experiment. Altering it, making it gluten free & vegan. If it sucked, I would move on to lunch and try something else…But it didn’t suck, and I’ve been living off pancakes and waffles for the last 3 days :)
Gluten Free/Vegan - Cornmeal Pancakes*makes enough for 4 and then some leftovers :)
1 1/4 Cups of Brown Rice Flour1/2 Cup Tapioca Flour1/2 Cup of Corn Meal1/2 - 3/4 Tsp Sea Salt*3/4 Tsp Baking Powder3/4 Tsp Baking Soda1/4 Tsp Xanthan Gum2 - 3 TBSP Agave or other natural sweetener*Ener-G Egg Replacer - Equivalent to 2 Eggs1 1/2 Cups of Hemp Milk(I prefer Hemp Dream Brand Hemp Drink in Original Flavor)2-3 TBSP Olive Oil*1-2 TBSP Maple Syrup*
*When it comes to things like sugar, salt, oil..I always estimate a little less. Mostly cause I know I’m gonna be dousing my cakes with maple syrup or peanut butter :)But if you must, you can use the full amounts.
In a large bowl, mix together all the dry ingredients, then add in the wet ingredients; and mix till your batter is smooth and no longer lumpy.
Now its time to get your pancake on!Heat the griddle over medium heat.You will know its hot when you can sprinkle water on it and it sizzles.Cook pancakes 1-2 minutes on each side, or until golden brown.
